RK Team Cooking with LLW, Food

Let’s face it – we all deserve a treat from time to time, and in moderation, there is absolutely nothing wrong with indulging in the occasional dessert. Tiramisu is a traditional, coffee-flavored Italian dessert. The light and creamy texture of this no-bake treat make it a favorite of many. Although there are countless variations of this easy-to-prepare dessert, below we have shared one of our favorites. This version of the recipe has all the fabulous taste of an authentic Tiramisu but is made without raw eggs, which simplifies the process and saves on calories.

Ingredients:

  • 1 cup (250ml) whipping cream
  • 1 cup (250g) mascarpone, softened
  • 1/4 cup (50g) granulated sugar
  • 1 tsp (5ml) vanilla extract
  • 1 & 1/2 cups espresso or very strong coffee, cooled
  • 2 tbsp (30ml) coffee liqueur (Kahlua or other)
  • 24–28 ladyfingers (Savoiardi/Boudoir). The number of cookies will depend on your pan size.
  • 2 tbsp unsweetened cocoa powder

ingredientsDirections:

  1. In one bowl, mix the coffee and liqueur. Set aside.
  2. In a separate mixing bowl, whip the whipping cream until light and fluffy. Place in the fridge to stay cool.
  3. In a third bowl, mix together the mascarpone, sugar, and vanilla. Once smooth, fold in the prepared whipped cream.
  1. One at a time, lightly submerge each ladyfinger in the coffee/liqueur mixture, then place face-down in your pan, creating a single layer of the cookies.
