One of the most famous dishes in Ukrainian cuisine, this hearty meal is full of nutrients, and yet still low in calories. Aside from being delicious, borscht is also rich in antioxidants and vitamins. Best of all, this soup can even help you regulate your blood pressure, and protect your heart, liver, and stomach. While there have been countless variations of this European staple created over the years, below we have shared a simple recipe that is sure to satisfy your taste buds.
Ingredients:
- 5-7 medium beets – peeled
- 1 leek – chopped
- 1 yellow onion – chopped
- 3 cloves garlic – chopped
- 1 shallot – chopped
- 1.5L chicken broth
- 1 tsp each of chili pepper, salt, pepper, cumin, oregano
- 1 tsp chili flakes
- 1 lemon – squeezed
- 1-inch grated ginger
- parsley for garnish
Directions:
Sauté onion, leek, and garlic, and shallots in coconut oil until translucent.
Add the broth. Add spices and turn heat up for 5 minutes.
Use a food processor to shred the beets.
Add the beets and bring to boil for 1 minute. Turn the heat down to low for 3 minutes, then remove from heat completely. The soup will continue to cook and soften the shredded beets.
Add lemon and parsley and ginger at the end.
Serve with ciabatta bread and a dollop of Greek yogurt or sour cream.

Taste throughout the entire process and add extra spices as needed.
